I wasn’t able to mention in my first blog that I am living in Dubai with my husband. Unfortunately, my two children need to go home in the Philippines due to some unexpected circumstances. So, just imagine how hard it is to be away from my children, thankfully, my husband is very supportive with my feelings, he makes things which will make me happy.
But problems strikes again in my family, my father is sick. Seriously sick, which led me to a premature decision of resigning from my job. Many were shock, because they know me as one of the loyal employee in our company, especially to our department. But there is a feeling beyond me that is telling me I need to go home. My husband is terribly sad, for many years, we were never been apart. Now, this is a test of trust.

Fear, confusion and mixed emotions are bothering me now. I asked myself why, only God knows. Maybe I am afraid for our finances to be very difficult, for sure it will be.
So, this is my last days in Dubai. Sad? Yes. Happy? Yes. Sad, because me and my husband would be apart for some time. Happy, because I would be able to see my sick father, my agonizing mother, and especially my children. Maybe, my children are worth the decision I made to go back.
Activities on my last days in Dubai? I cooked a lot. I am doing it because of my husband, I want him to feel every minute of my presence, do whatever that can be done, and say whatever words that is needed to say.
To lighten up the story, (gosh, I was too emotional on the previous paragraph). I will be sharing my meatloaf recipe (photo above) which I cooked yesterday for our dinner. Meatloaf is not a usual Filipino delicacy, we have our own way of cooking it. Embutido, being the Philippine-Style meatloaf is known as a menu for special occasion. But what I did yesterday was a combination of Philippine Embutido and western meatloaf. I have found so many recipes but I feel to do it my way. I hope this would be helpful, and believe me, it is very tasty!
MEATLOAF RECIPE
500gms. Ground beef
1 carrots, finely chopped
1 onion finely chopped
1 teaspoon of Pickle Relish
¼ cup of breadcrumbs
2 eggs
½ teaspoon salt
1 spoon of white sugar
½ teaspoon of freshly ground pepper
¼ cup Banana Catsup
2 spoonful of Brown sugar
Directions:
Mix all together the ingredients except for the Banana catsup and Brown sugar. Mix well. Put in a meatloaf pan or any aluminum tray that is being used for cakes. After putting the mixture into the pan, mix Banana Catsup and Brown Sugar, spread on the top of the mixture. Bake for 30-40 minutes at 350 degrees F. Remove from oven and drain excess liquid. Serve hot.
